Today was our final day of activities for group 2. We began the day in the most delicious way by attending a Thai cooking class. We began by extracting coconut meat to make coconut cream using traditional Thai tools. We then created local delicacies such as Pad Thai, Tom Yum Soup, and mango sticky rice. The pressure was on to perform since this was going to be our lunch for the day. Thankfully we all ended up with delicious meals. In the afternoon we participated in all the activities that we had not done yet. This meant a relaxing afternoon of crafts and Muay Thai for one group and a challenging session of rock climbing for the other. After that we rewarded ourselves with a cool dip in the pool before dinner.
During kayaking we learned how to paddle in all directions. Most importantly we learned how to get into a kayak when it gets tipped over.
Tonight we were treated to a very special evening called Khantoke – a traditional dinner and performances. We first enjoyed a delicious feast of fried chicken, basil pork, sticky rice and other dishes. We sat on carpets placed on the ground in an amphitheater and shared the food in groups of five. After dinner, we watched traditional Thai dance performances and a drumming and fire show. Some students even volunteered to join the last performance! All in all, this was an amazing last evening to an amazing week.
